What is the difference between bourbon and whiskey?
The history of bourbon whiskey is a bit sketchy at the least. Even the name of Bourbon' isn't quite understood but given that bourbon whiskey was developed in American in close proximity to the French family of Bourbon, there is some chit-chat amongst aficionados and historians that make a historic leap between this classis distilled spirit at the possibility of French distilleries lending their family name to the tipple.
In order to make any kind of whiskey, which includes the signature malt blends of the Scottish Highlands and the Irish moors, you need to first malt a grain that is relatively high in natural sugars and then you need to ferment it and then you need to distil the fermented liquid to concentrate both the flavours and the alcohol content of the drink. This history of distilling owes its roots in ancient medicine and in the early development of brandy. When wine merchants would send their wine across the world, keeping the wine free of free acting bacteria and foul tasting hitch-hikers was top priority so that they still had a marketable product at the end of its long voyage that not only still made them some money, but didn't accidentally kill the people who drank it. It was understood at this time, the early sixteenth century or so, that distilling fermented liquids increased the alcoholic strength of whatever you had fermented by removing much of the water (where bacteria could grow) and flooding the rest of it with bacteria proof alcohol. In the case of brandy, really bitter wine that was distilled and then left in an oak cask for a while for shipping or for selling later, proved to greatly enhance the flavours. It didn't take long for the aging process to flood through the rest of the distilled alcohol market and it's this process of keeping your distilled spirit in a range of casks like charred oak barrels or white oak barrels that often develop the signature flavour profiles of your favourite sipping drinks like bourbon whiskey.
Bourbon whiskey was developed in Kentucky and there is a county called Bourbon County which some people believe leant its name to the drink as well. Like a single malt Scotch whisky which has specific standards of identity such as being made from a single batch of malted barley, you can't call your drink a bourbon whisky unless it's made in Kentucky from a malted grain combination of at least 51 percent corn. It must also going into the oak charred aging barrels at 125 proof (80% ABV) and be bottled at no less than 80 proof (40%) but often is bottled at 100 proof.
You will have heard of brands like Wild Turkey, Jack Daniels and Jim Beam. They are all distilled spirits of roughly the same colour, and they are all considered to be whiskeys, however, only two of them are actually bourbons.
Jack Daniels is called a Tennessee whiskey because, for the most part, it's made in Tennessee but also because it has a very specific recipe which makes it uniquely not a bourbon. The most famous part of this recipe includes the fact that it is drip filtered through sugar maple charcoal to give it its signature smoothness.
Rye whiskey is also another kind of distilled spirit from the same places that bourbon is made but is not a bourbon whiskey because the malted mash from which the spirit is distilled contains 51% rye grain rather than corn.
What to mix with bourbon whiskey?
